Chocolate Chip Cookies
Indulgent soft cookies bursting with chocolate. Perfectly chewy in the middle and crisp around the edges.
Ingredients
1 ¼ cup plain flour
½ cup white sugar
¾ cup brown sugar
1 tsp salt
½ cup unsalted butter (melted and browned)
2 tbsps unsalted butter (partially melted)
1 egg
1 tsp vanilla extract
½ baking soda
100g dark chocolate (chopped)
100g milk chocolate (chopped)
¼ sea salt flakes (to garnish)
Method
In a large bowl, add white sugar, brown sugar and salt then add brown melted butter. Whisk until a paste starts to form. Follow with the partially melted butter and whisk until the paste is mostly smooth.
Whisk in egg and vanilla extract until it starts to form a slightly whipped texture. Fold through sifted flour and baking soda. Be mindful not to overmix.
Gently fold through the chopped chocolate then chill the dough for at least 30 minutes.
Preheat oven 15 minutes before baking at 180°C.
When ready to bake, use a 1 tablespoon measurement to scoop dough onto lined baking trays – 6 per tray. Bake for 8 minutes and allow to cool for 2 – 3 minutes before handling. Optional: lightly sprinkle sea salt flakes on each cookie while warm.
