Bircher Muesli

 

If you’re short on time in the morning, try meal-prepping this simple and tasty Bircher Muesli.

Ingredients

  • 1 cup rolled oats

  • ¾ cup plain yoghurt

  • ½ cup apple juice

  • ½ tsp maple syrup

  • 1 red apple (peeled, cored, and grated)

  • ½ cup fresh blueberries

  • ¼ cup toasted shredded coconut

  • ¼ cup toasted flaked almonds

  • 2 tbsps pepitas

  • ¼ tsp cinnamon

  • Raspberries (to serve)

  • Mango (diced to serve)

Method

  1. In a large bowl, add yoghurt, apple juice, maple syrup, grated apple, blueberries, oats, shredded coconut, flaked almonds, pepitas and cinnamon.

  2. Mix until ingredients are well combined.

  3. Evenly portion Bircher muesli into smaller containers.

  4. Top with raspberries and mango, extra shredded coconut, or toppings of choice.

Store in the fridge for up to 2 days.
