Blueberry Buttermilk Pancakes

 

An all-time classic breakfast for a reason. These scrumptious and fluffy pancakes will make you never buy store-bought pancake mix again.

Ingredients

  • 2 cups plain flour

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 1 tsp cinnamon

  • 3 tbsps white sugar

  • ½ tsp salt

  • 1 egg

  • 2 cups buttermilk

  • 2 tbsps butter (melted)

  • 1 cup fresh blueberries

Method

  1. In large bowl, add the dry ingredients – flour, baking powder, baking soda, cinnamon, white sugar, and salt.

  2. In a separate bowl, combine buttermilk, egg and melted butter by whisking.

  3. Pour wet mixture into the dry ingredients, combine thoroughly by stirring or whisking.

  4. Allow batter to rest for 10 – 15 minutes at room temperature.

  5. When ready, heat butter or oil in a fry pan over low-medium heat. Spoon mixture into the fry pan (enough for one pancake) then add a few blueberries on top. Once bubbles start to form in the mixture, flip the pancake and cook until the other side is golden brown (approximately 2 – 3 minutes).

  6. Repeat until batter is finished.

Makes 12 pancakes
