Blueberry Buttermilk Pancakes
An all-time classic breakfast for a reason. These scrumptious and fluffy pancakes will make you never buy store-bought pancake mix again.
Ingredients
2 cups plain flour
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
3 tbsps white sugar
½ tsp salt
1 egg
2 cups buttermilk
2 tbsps butter (melted)
1 cup fresh blueberries
Method
In large bowl, add the dry ingredients – flour, baking powder, baking soda, cinnamon, white sugar, and salt.
In a separate bowl, combine buttermilk, egg and melted butter by whisking.
Pour wet mixture into the dry ingredients, combine thoroughly by stirring or whisking.
Allow batter to rest for 10 – 15 minutes at room temperature.
When ready, heat butter or oil in a fry pan over low-medium heat. Spoon mixture into the fry pan (enough for one pancake) then add a few blueberries on top. Once bubbles start to form in the mixture, flip the pancake and cook until the other side is golden brown (approximately 2 – 3 minutes).
Repeat until batter is finished.
