Chocolate Cake for Two
The perfect portion to satisfy your chocolate cake cravings.
Ingredients
½ cup plain flour
½ cup sugar
3 tbsps cocoa powder
½ tsp baking powder
Pinch of salt
1 egg (lightly beaten)
¼ cup milk of choice
¼ cup olive oil
¼ tsp vanilla
Frosting
2 tbsps butter (softened)
2 tbsps peanut butter (or more butter)
2 tbsps cocoa powder
¾ cup icing sugar
2 tbsps milk (or as needed for thinning)
Method
Preheat oven to 180°C.
In a mixing bowl, combine dry ingredients – flour, sugar, cocoa powder, baking powder and salt.
Form a well and add the wet ingredients – egg, milk, olive oil and vanilla. Mix well until a batter forms.
Distribute batter into two lightly greased (olive oil or butter) ramekins. Bake for 30 minutes or until a skewer comes out clean from the centre.
Once baked, allow cakes to cool while you make the frosting.
In a small mixing bowl, whisk butter, peanut butter, icing sugar, cocoa powder and milk until frosting forms to your desired consistency. A hand whisk is all you need, trust the process however, you can use a handheld mixer.
Once cakes have cooled, spread frosting on top and add your choice of sprinkles/toppings.
