Chocolate Cake for Two

 

The perfect portion to satisfy your chocolate cake cravings.

Ingredients

  • ½ cup plain flour

  • ½ cup sugar

  • 3 tbsps cocoa powder

  • ½ tsp baking powder

  • Pinch of salt

  • 1 egg (lightly beaten)

  • ¼ cup milk of choice

  • ¼ cup olive oil

  • ¼ tsp vanilla

Frosting

  • 2 tbsps butter (softened)

  • 2 tbsps peanut butter (or more butter)

  • 2 tbsps cocoa powder

  • ¾ cup icing sugar

  • 2 tbsps milk (or as needed for thinning)

Method

  1. Preheat oven to 180°C.

  2. In a mixing bowl, combine dry ingredients – flour, sugar, cocoa powder, baking powder and salt.

  3. Form a well and add the wet ingredients – egg, milk, olive oil and vanilla. Mix well until a batter forms.

  4. Distribute batter into two lightly greased (olive oil or butter) ramekins. Bake for 30 minutes or until a skewer comes out clean from the centre.

  5. Once baked, allow cakes to cool while you make the frosting.

  6. In a small mixing bowl, whisk butter, peanut butter, icing sugar, cocoa powder and milk until frosting forms to your desired consistency. A hand whisk is all you need, trust the process however, you can use a handheld mixer.

  7. Once cakes have cooled, spread frosting on top and add your choice of sprinkles/toppings.
