Pork Mince Stir Fry

A quick and easy weekday meal that’s full of flavour.

Ingredients

  • 500g pork mince

  • 1 fresh chilli (finely chopped)

  • 1 small shallot (peeled, finely chopped)

  • 1 tbsp minced garlic

  • 1 tbsp minced ginger

  • 1 tbsp sesame oil

  • ¼ cup fresh Thai basil leaves

  • 1 cup green beans (chopped into small even pieces)

  • 2 tbsps soy sauce

  • 2 tbsps oyster sauce

  • Salt and pepper to season     

To Serve

  • 1 egg (fried)

  • Cooked rice of choice

  • 1 wedge of lemon

  • Chilli oil

Method

  1. In a wok or fry pan over medium heat, add sesame oil then chopped shallot and fresh chilli, sauté for 1 minute until shallot is soft. Add minced garlic and ginger then sauté for another minute.

  2. Add pork mince and cook until golden brown - this may take a few minutes.

  3. Add soy sauce and oyster sauce, cook for 1 minute before adding green beans. Season with salt and pepper.

  4. Sauté for a couple of minutes or until the green beans are cooked to your preference (I like a little crunch).

  5. Serve over a bed of rice, top with a fried egg and chilli oil. A squeeze of fresh lemon lifts the dish - recommended!
