Pork Mince Stir Fry
A quick and easy weekday meal that’s full of flavour.
Ingredients
500g pork mince
1 fresh chilli (finely chopped)
1 small shallot (peeled, finely chopped)
1 tbsp minced garlic
1 tbsp minced ginger
1 tbsp sesame oil
¼ cup fresh Thai basil leaves
1 cup green beans (chopped into small even pieces)
2 tbsps soy sauce
2 tbsps oyster sauce
Salt and pepper to season
To Serve
1 egg (fried)
Cooked rice of choice
1 wedge of lemon
Chilli oil
Method
In a wok or fry pan over medium heat, add sesame oil then chopped shallot and fresh chilli, sauté for 1 minute until shallot is soft. Add minced garlic and ginger then sauté for another minute.
Add pork mince and cook until golden brown - this may take a few minutes.
Add soy sauce and oyster sauce, cook for 1 minute before adding green beans. Season with salt and pepper.
Sauté for a couple of minutes or until the green beans are cooked to your preference (I like a little crunch).
Serve over a bed of rice, top with a fried egg and chilli oil. A squeeze of fresh lemon lifts the dish - recommended!
