Garlic Chilli Prawn Spaghetti

A super simple weeknight dinner option that packs a punch.

Ingredients

  • 150g green prawns (peeled, deveined, tails removed)

    Optional: leave two prawns with tails on for garnish

  • 250g spaghetti

  • Juice of 1 lemon

  • 1 small shallot (peeled, finely chopped)

  • 1 tbsp minced garlic

  • 1 tsp chilli flakes

  • ¼ cup fresh parsley (finely chopped)

  • 2 tbsps olive oil

  • Salt to season             

Method

  1. In a pot, bring water to the boil and add a pinch of salt. Add spaghetti and cook for 9 minutes or until al dente.

  2. While the spaghetti is cooking, heat 1 tbsp of olive oil over low-medium heat in a saucepan. Add shallots and garlic, sauté for 2 minutes or until shallots are lightly soft. Add chilli flakes and sauté for 1 minute.

  3. Add lemon juice and stir well. Add prawns and cook for at least 3 minutes per side. Add half of the parsley and a pinch of salt.

  4. By now, the spaghetti should be al dente. Using tongs, add spaghetti to the saucepan followed by ¼ cup of the pasta water.

  5. Add the remaining olive oil and parsley. Toss the spaghetti well with the mixture and prawns. Season with salt to taste.

  6. Garnish with a drizzle of olive oil and fresh parsley. Top with tailed prawns (optional).

    Serves 2
