Summer Salad
A refreshing salad packed with the flavours of summer – perfect for entertaining or a light lunch.
Ingredients
1 mango (seeded and diced)
1 cup watermelon (diced)
1 cup grape tomatoes (sliced in halves)
½ avocado (seeded and diced)
120g mixed salad leaves (or leaves of choice)
Dressing
¼ cup balsamic vinegar
¼ olive oil
2 tsps honey
½ tsp salt (or to taste)
Method
In a large bowl add salad leaves followed by diced mango, watermelon, avocado and sliced tomatoes.
In a small bowl add balsamic vinegar, olive oil, honey, and salt. Whisk until well combined.
Pour dressing over your salad and then mix until all ingredients are coated.
Serve and portion as desired.
