Snapper Tacos with Pineapple Salsa

 

A healthy and delicious option to satisfy those taco cravings.

Ingredients

  • Snapper fillet (deboned)

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp paprika

  • Salt and pepper to season

  • 2 tbsps olive oil

  • ½ cup finely diced tomatoes (preference is grape or cherry)

  • ½ cup finely diced pineapple

  • 2 limes

  • ¼ cup finely chopped coriander

  • Small soft tortillas of choice

Special Taco Sauce

  • ¼ cup mayonnaise (personal preference is Kewpie)

  • 1 tbsp chilli sauce (personal preference is Siracha)

  • 1 tsp hot sauce (personal preference is Cholula)

  • 1 tbsp lime juice

  • ¼ tsp garlic powder

  • Salt and pepper to taste

Method

  1. Preheat oven to 180°C.

  2. In a lined baking tray, coat snapper in olive oil, garlic powder, onion powder, paprika, salt and pepper. Be sure to coat both sides.

  3. Place snapper in the oven and bake for 15 - 20 minutes or until cooked. Flip the fish halfway to ensure both sides are cooked evenly.

  4. While the fish is cooking, prepare salsa by combining diced pineapple, diced tomatoes, the juice of 1 lime and salt to season in a bowl. Mix well and set aside.

  5. To make the Special Taco Sauce, combine mayonnaise, chilli sauce, hot sauce, garlic powder, lime juice, salt and pepper in a bowl then mix until well-combined.

  6. Once the snapper is cooked, take out of the oven. Warm soft tortillas to preference.

  7. To assemble tacos, start with some of the snapper fillet followed by pineapple salsa, Special Taco Sauce, and then coriander. Served with lime wedges.

Makes 4 small tacos
