Salmon with Gremolata

 

A delicious and healthy weeknight dinner that effortlessly pairs with your favourite sides.

Ingredients

  • 1 salmon fillet (skin removed)

  • 1 tsp olive oil

  • ¼ tsp paprika

  • ¼ tsp garlic powder

  • ¼ tsp onion powder

  • Salt and pepper

Gremolata

  • ¼ cup finely chopped fresh continental parsley

  • ¼ cup olive oil

  • Juice of 2 lemons

  • ¾ tsp salt (or to taste)

  • Small pinch of pepper

Method

  1. Prepare gremolata but mixing olive oil, lemon juice, parsley, salt and pepper in a small bowl and then refrigerate while cooking salmon or until you’re ready to serve.

  2. Prepare salmon by coating in olive oil, paprika, onion powder, garlic powder, salt and pepper. Optional: refrigerate (covered) for 15 minutes before cooking.

  3. Preheat airfryer for 5 minutes at 180°C.

  4. Cook salmon for 10 – 12 minutes depending on preference.

  5. Once cooked, dress with the gremolata and serve with your favourite sides.
