Asian-inspired Pickled Cucumbers
These refreshingly tangy pickled cucumbers are the perfect accompaniment to almost any dish.
Ingredients
1 continental cucumber
1 tbsp salt
1 tbsp light soy sauce
1 tbsp rice wine vinegar
1 ½ tbsps seasame oil
1 clove garlic (minced)
1 tsp dried chilli flakes
1 tbsp white sugar
Method
Wash and dice your cucumber into cubes.
Place diced cucumber into a bowl and coat with the 1 tbsp of salt. Leave to sit for 7 minutes.
After 7 minutes, rinse salt off cucumbers and pat dry using paper towels or a clean tea towel.
In a separate bowl, combine light soy sauce, rice wine vinegar, sesame oil, minced garlic, chilli oil and white sugar. Whisk until sugar dissolves and well-combined.
Add the diced cucumber to the mixture and coat thoroughly.
Refrigerate for at least half an hour before serving (optional but recommend).
