Asian-inspired Pickled Cucumbers

Cucumber salad with a side of rice
 

These refreshingly tangy pickled cucumbers are the perfect accompaniment to almost any dish.

Ingredients

  • 1 continental cucumber

  • 1 tbsp salt

  • 1 tbsp light soy sauce

  • 1 tbsp rice wine vinegar

  • 1 ½ tbsps seasame oil

  • 1 clove garlic (minced)

  • 1 tsp dried chilli flakes

  • 1 tbsp white sugar

Method

  1. Wash and dice your cucumber into cubes.

  2. Place diced cucumber into a bowl and coat with the 1 tbsp of salt. Leave to sit for 7 minutes.

  3. After 7 minutes, rinse salt off cucumbers and pat dry using paper towels or a clean tea towel.

  4. In a separate bowl, combine light soy sauce, rice wine vinegar, sesame oil, minced garlic, chilli oil and white sugar. Whisk until sugar dissolves and well-combined.

  5. Add the diced cucumber to the mixture and coat thoroughly.

  6. Refrigerate for at least half an hour before serving (optional but recommend).
